The History: Jairo Arcila is the patriarch of one of Colombia’s most influential coffee dynasties. A third-generation grower, Jairo spent over 40 years as a mill manager for one of the country’s largest exporters. He saw millions of bags of “average” coffee move through the system, always dreaming of the day he could focus on the “Exceptional.” Using his life savings, he slowly purchased his own land, starting with Finca La Esmeralda in 1987, and eventually growing his holdings to include the stunning Santa Mónica farm.

The Innovation: For decades, Jairo worked the “day job” at the mill and the “dream job” at the farm. It wasn’t until his sons, Felipe and Carlos, returned from Australia with news of the specialty “third wave” that the true potential of Santa Mónica was unlocked. Jairo was one of the first in the region to take the risk of planting Gesha and Wush Wush at a time when others were sticking to high-yield hybrids.

At 70+ years old, Jairo remains the most curious man in the room. He has mastered the “Lactic Natural” process—fermenting cherries in sealed bags with wine yeasts and fruits to create “Flavor Bombs” that have redefined the Quindío profile. At Santa Mónica, he grows not just coffee, but oranges, plantains, and bananas, creating a diverse canopy that protects the delicate Gesha trees.
