Location: Planadas, Tolima | Variety: Wush Wush

The Find: Tucked away at the back of a small drying shed in Planadas, we discovered a hidden treasure: a tiny 2-bag lot of Wush Wush. Originally an Ethiopian heirloom, this variety has adapted to the volcanic soils of South Tolima in a fascinating way. Because of the extreme UV exposure at this 1,900m site, the beans have developed a very high density (SHB), which allows them to withstand complex processing without losing structural integrity.

The producer used a “Long-Ferment Natural” process, drying the cherries slowly over 25 days on raised beds. The result is a profile that tastes more like a forest fruit reduction than a coffee. It’s heavy, syrupy, and layered with wild blueberry and bergamot. This is the definition of an AXIS Gem—it is rare, it is technically difficult to produce, and it is highly volatile. By moving this lot via air-freight immediately after milling, we are bypassing the 60-day sea-voyage that usually destroys these fragile floral top-notes. This is a one-time allocation.
